It was along the Brittany Coast of France that St Michel Galette was created over a century ago by the Patissier Joseph Grellier and his wife Constance. Sensing the entrepreneurial opportunity, Grellier’s wife, Constance, began to sell the buttery cookies to vacationing tourists at the beach. The galette quickly gained popularity and the Grellier’s bakery business expanded. Today the galette is still made using the original recipe by the family-run company at St Michel. Today St Michel bake not only galettes, but other traditional French pastry classics like madeleines, palmiers and palets.
