This mountainous region is believed to be where the Cinnamomum verum / Cinnamomum zeylanicum species of evergreen tree originated. The unique climate produces the finest "True Cinnamon" in the world. The inner bark has a golden brown color, citrusy aroma and mild flavor. Ceylon cinnamon is the recommended type of cinnamon for dietary supplements given it has virtually no unwanted coumarin (<0.005%) and numerous health benefits published in the U.S. National Library of Medicine. It is the preferred type of cinnamon in England and Mexico where it is used in baked goods like cookies, cakes and breads.
